Al Pastor Grilled Shrimp & Pineapple Skewers

Ingredients

  • 1½ pounds large shrimp (36 count), peeled and deveined
  • 1 (1-ounce) package Carroll Shelby’s Al Pastor Taco Seasoning
  • 2 tablespoons olive oil 
  • 2 tablespoons lime juice 
  • 2 cups (about 1 small) fresh pineapple, cut into 1-inch chunks
  • 1 large red bell pepper, seeded and cut into 1-inch squares 
  • Fresh cilantro, for garnish
  • Lime wedges, for garnish
  • 12 (8-inch) skewers

Directions

  1. Preheat the grill to medium-high or set the oven to 450 ℉ on convection. Oil the grill or a grill pan. 
  2. In a large bowl, place the shrimp, Al Pastor Taco Seasoning, olive oil, and lime juice and toss well. 
  3. Thread 1 piece of pineapple, 1 piece of bell pepper and 1 shrimp onto a skewer and repeat the process for a total of 3 shrimp per skewer, ending with bell pepper and pineapple. Continue with remaining skewers. 
  4. Transfer the skewers to the grill and cook until the shrimp are opaque and cooked through, about 3 minutes per side. Transfer to a clean platter, garnish with cilantro and lime wedges, and serve immediately.
