Al Pastor Grilled Shrimp & Pineapple Skewers
This savory, smoky and slightly sweet recipe is the perfect way to kick off the summer grilling season.

- 1½ pounds large shrimp (36 count), peeled and deveined
- 1 (1-ounce) package Carroll Shelby’s Al Pastor Taco Seasoning
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cups (about 1 small) fresh pineapple, cut into 1-inch chunks
- 1 large red bell pepper, seeded and cut into 1-inch squares
- Fresh cilantro, for garnish
- Lime wedges, for garnish
- 12 (8-inch) skewers
Directions
- Preheat the grill to medium-high or set the oven to 450 ℉ on convection. Oil the grill or a grill pan.
- In a large bowl, place the shrimp, Al Pastor Taco Seasoning, olive oil, and lime juice and toss well.
- Thread 1 piece of pineapple, 1 piece of bell pepper and 1 shrimp onto a skewer and repeat the process for a total of 3 shrimp per skewer, ending with bell pepper and pineapple. Continue with remaining skewers.
- Transfer the skewers to the grill and cook until the shrimp are opaque and cooked through, about 3 minutes per side. Transfer to a clean platter, garnish with cilantro and lime wedges, and serve immediately.
