Ingredients
- ½ bag tortilla chips
- 8 ounces pepper jack cheese, grated
- 1 medium-sized tomato, diced (about ½ cup)
- 1 small jalapeño, sliced into rounds
- ½ small white onion, finely chopped (about ½ cup)
- ⅓ cup cilantro
- 2 cups (about ½ recipe yield) Beef Birria, shredded
- ½ cup cotija cheese
Directions
- Preheat broiler to high.
- Line an ovenproof baking dish with half of the tortilla chips. Evenly top them with half of the pepper jack cheese, tomatoes, jalapeños, onions, cilantro and Beef Birria.
- Add the remaining tortilla chips, then top with remaining pepper jack cheese, tomatoes, jalapeños, onions, cilantro and
Beef Birria. - Transfer the dish to the broiler and cook until the cheese is melted and bubbly, about 3 minutes.
- Remove from the oven and sprinkle with cotija cheese.
