Slow Cooker Birria Tacos
Birria tacos are a surefire winner for an easy family meal or party food. Birria is a traditional Mexican stew that’s a cinch to make in a slow cooker using Carroll Shelby’s seasonings – then just shred the stew meat, stuff it into tortillas and pan fry them until crispy.

Ingredients
- 2 1/2 pounds chuck roast
- 1 (1 ounce) package Carroll Shelby’s Birria Taco Seasoning
- 2 teaspoons coarse salt (adjust to taste)
- 1 (14.5 ounce) can diced tomatoes
- ½ cup water
- 18-20 flour or corn tortillas
- Grated cheese (optional)
- Toppings of choice, such as chopped onions, tomatoes and cilantro and crema or sour cream
Directions
- Rub beef with Birria Taco Seasoning and add salt to taste; place in a slow cooker with tomatoes and water, cover and cook on low for 9 hours or high for 4.5 hours.
- When cooked, remove meat and shred; reserve broth in pot.
- Dip each tortilla in broth, then place in a skillet over medium heat. Top with some cheese and beef, then fold, press and cook each side until golden brown.
- Serve tacos with toppings of choice and a bowl of broth on the side for dipping.
